Ingredients

  • Cumin1 1/2 tsp cumin seeds (7.5 ml)
  • Coriander1 1/2 tsp coriander seeds (7.5 ml)
  • Shallot1 shallot, peeled
  • Mint1/4 cup loosely packed fresh mint leaves (60 ml)
  • Thyme2 tsp thyme leaves (10 ml)
  • Champagne1/4 cup champagne vinegar (60 ml)
  • Harissa1 Tbsp harissa paste or red chile paste (15 ml)
  • Dijon Mustard1 1/2 tsp Dijon mustard (7.5 ml)
  • Olive Oil1/2 cup olive oil (120 ml)

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
