Method

  1. Pour to the lines in order (bottom → top): WATER, W.WINE VINEGAR, OLIVE OIL, W.BALSAMIC, HOT SAUCE.
  2. Add by count: 2½ POBLANOS, 1 POBLANO, 1 SHALLOT, ½ BUNCH PARSLEY, 1 BUNCH MINT, 1 LEMON.
  3. Season to finish: SALT (about 2 tsp), SUGAR (about 1½ tsp), TOMATILLO (to taste), SALT (to taste), PEPPER (to taste), GARLIC OIL (to taste).
  4. Cap the jar and shake until emulsified.
